Cauliflower is a good source of vitamin C. A half cup of chopped, cooked contains as much vitamin C as a half cup of orange juice. Cauliflower contains potassium, a mineral essential for muscle and bone development.
Cauliflower Gratin
1 head cauliflower, cored, separated into 1-inch florets
1 Tbsp. Earth Balance
1 clove garlic, crushed
1/2 cup unsweetened plain soy milk
Sea salt and freshly ground black pepper
1 cup freshly grated Parmesan cheese (to make vegan use Daiya mozzarella shreds)
Preheat oven to 400 degrees F.
Smear soft Earth’s Balance into a pan. Sprinkle crushed garlic across the bottom of the pan. Bring a large pot of salted water to boil. Add the cauliflower and boil for 3-5 minutes, until cauliflower is tender-crisp. Drain thoroughly, then put cauliflower in pan, distributing evenly. Pour soy milk over cauliflower and then sprinkle lightly with salt and several grinds of black pepper. Top with cheese.
Bake gratin for 40 minutes, until light golden brown.

Soothing Avocado Mask
1 ripe avocado, masked
1 carrot, cooked and mashed
1/2 cup heavy cream
1 egg, beaten
3 TBSP honey
Combine all ingredients in a bowl until smooth. Lightly spread over face and neck and leave on
for 10-15 minutes. Gently rinse with cool water.
